Quick Trip to Elk Neck

This year our annual camping trip with our local crew to French Creek was moved south to Elk Neck State Park in Maryland.

As usual, we sat around the fire most of the weekend and ate.   We didn't take many photos, but here are Phyllis's famous brussel sprouts over the fire.  Gotta love cast iron.  At home, she does 30 minutes in the oven on 550 with salt, pepper, and ground garlic.  On the fire, Brendan was in charge and it was a watch and see, but they turned out great!  I can't remember what else we ate on this trip, but it was good.

The campsite suited our purposes, we found two sites together that were separated from the other sites by some trees.  We didn't have much time to explore the other beaches as the weather wasn't the best.  The short hike out to the point was fun, and the lighthouse was a treat.  Twice this year, I have found open lighthouses or fire towers open to the public when only one's ablity to climb a ladder saved you from falling.  So glad there are still some-what dangerous climbs still out there.  I digress...anyway, it was a fun and relaxing weekend despite the crazy virus that passed through the group afterwards...hopefully everyone is healthy and comes back for next year for the 6th Annual Columbus Day Camping Trip!

Canoodeling on Lake Lila

Such a great weekend in the Adarondaks with my favorite travel partners and their stand-up male companions.  This was the trip that finally made this blog idea a reality. 

I'm a fan of slack packing-getting out into the wilderness without hiking hundreds of miles- and canoe camping is my favorite form of this.  We spent most of the weekend lounging and splashing around our amazing campsite on Snell Island (aka Camp Noodles on Red Squirrely Island) and we did a lot of cooking.  At least one canoe's worth of food was consumed by the six of us in three days.  Here's some photos and step by steps to get ideas on how to eat well in the wilderness:



 1.Veggie Pasta with summer squash, baby eggplants, fresh oregano, tomatoes, and a bit of Newman's Own Sauce.  This was delish over whole wheat pasta cooked on the camp stove.



2.Breakfast sammys with fried egg    




























3. Cast Iron Berry Crisp made over the fire.
This was a a spontaneous post-breakfast treat that turned out amazing thanks to Maggie's idea, Tracy's recipe, Mick's execution, and Kiera's homemade garnola......yum!!
