I'm a fan of slack packing-getting out into the wilderness without hiking hundreds of miles- and canoe camping is my favorite form of this. We spent most of the weekend lounging and splashing around our amazing campsite on Snell Island (aka Camp Noodles on Red Squirrely Island) and we did a lot of cooking. At least one canoe's worth of food was consumed by the six of us in three days. Here's some photos and step by steps to get ideas on how to eat well in the wilderness:
1.Veggie Pasta with summer squash, baby eggplants, fresh oregano, tomatoes, and a bit of Newman's Own Sauce. This was delish over whole wheat pasta cooked on the camp stove.

This was a a spontaneous post-breakfast treat that turned out amazing thanks to Maggie's idea, Tracy's recipe, Mick's execution, and Kiera's homemade garnola......yum!!
